Carioca beans, as common dry beans, play an important role in human nutrition because of their high amount protein (with elevated lysine content), complex carbohydrates, dietary fiber (both soluble) as well as several vitamins and minerals. This pulse is used as a source of protein in vegan diets. Additionally, beans are low in fat and glycemic index. They contribute significantly to satiety and improve the gut microbiome (Tucker, 2020). |
